No hot dogs when we camp

People have asked, "What do you eat while you camp?" Honestly, we eat well. Here are some of our favorite meals we've cooked while camping, usually on our camp stove, but sometimes over the camp fire.


  1. Trout. The boys fished on Jackson Lake at Grand Teton National Park and caught 7 fish total, brown trout and lake trout. They kept three and threw the rest back. For dinner that night, we seasoned the fish with lemon, butter, salt and pepper, wrapped them in foil, and cooked them on the camp fire. The boys wanted Caeser salad and asparagus with their fish, so we grabbed a bag of salad at the campsite's grocery store and sauteed the asparagus in butter. Delicious!

  2. New Years Dinner. We were camping at Manatee Springs State Park in Florida for New Years, and we didn't want to let our traditional meal disappear. So we cooked pork chops (marinated in barbecue sauce), greens (from a can), and black-eyed peas (from a can) on the camp stove. I had cooked some cornbread at home that we ate with it. Health, wealth, and happiness, even in the middle of the woods.

  3. Classic chili. This is our go-to. We fry up some ground beef, add onions, diced tomatoes, two cans of beans, and chili seasoning. We also usually bring a package of pre-cooked rice that we can heat up. We serve with sour cream and cheese. (If you're in the northwest, try ground bison instead).

  4. Red beans and rice. To make this easier, I like to cut onions and peppers at home and bring them in a Ziploc bag. At the campsite, slice some Conecuh sausage, add a can of diced tomatoes (undrained), one can of light red beans, one can of dark red beans, and creole seasoning. Heat up some pre-cooked rice as mentioned above, and serve. (Yes, we know this is not real red beans and rice like you would eat in New Orleans, but this is how we like it.)

  5. Bagged dinner. For a super easy dinner, buy a bagged dinner like Bird's Eye Garlic Chicken (chicken, pasta, broccoli, carrots, sauce), add some frozen green peas, cook in one pot. Easy. We have also done Lo Mein.

  6. Steak fajitas. Yes, steak fajitas. We bought the pre-packaged steak, peppers and onions from a local grocery store in Jackson, Wyoming. But you could easily season some steak meat with fajita seasoning and cut up the peppers and onions yourself to bring in a Ziploc bag. We served ours with tortillas and the same sour cream and cheese we bought for the chili. Fancy.
